Hand grading is exactly what it sounds like: people manually sort shrimp by size. It’s a method that gets high marks for accuracy and gentle handling. This is ideal for small businesses, where volume isn’t that high and meeting clientele expectations is more important.

But for medium to large plants, not so much. 

For bigger processing plants, hand-grading operations often require 60 to 80 workers—it is inefficient and costly.

Automated grading systems can process thousands of pounds of shrimp per hour, significantly reducing labor costs while increasing throughput.

Types of Automated Shrimp Grading Systems

Gap-drop systems are praised for their speed, high throughput, and reliability, making them the go-to choice for operations needing high-capacity grading without compromising accuracy​.

For processors looking to scale up and maintain efficiency, gap-drop systems offer an ideal balance between speed, accuracy, and cost-effectiveness. 

Measuring Shrimp Grading Accuracy

Once you’ve invested in an automated grading system, how do you ensure that it’s performing at its best? 

Use the uniformity ratio: 

  1. Throughout the processing day, take samples from the graded products.
  2. From these samples, select a certain number of the smallest and largest shrimp, typically 5 or 10 of each size category.
  3. Weigh these samples separately and list down the result.
  4. The uniformity ratio is calculated by dividing the weight of the largest shrimp by the weight of the smallest. 
  5. The closer the uniformity ratio is to 1, the more consistent your shrimp grades are. 

For smaller shrimp, a wider grading range is generally acceptable, which results in a higher uniformity ratio. 

It’s also important to adjust the grading system periodically to maintain accuracy, especially when running the system at higher throughputs, which can increase the risk of errors such as “piggybacking” (when smaller shrimp ride on the top of a larger shrimp and pass through the wrong grading gap).
