<p>Ecuador’s coastal provinces have become a thriving hub for Ecuadorian shrimp farming, an industry that now plays a critical role in the country’s economy. The country has built a reputation as a global leader in sustainable aquaculture.&nbsp;</p>



<p>But behind this success are not just large companies—it’s the countless small farmers, often battling against the odds, who have played a key part in this transformation.</p>



<p>One such farm lies along the estuaries of Machala, nestled in the shrimp-farming heartland of El Oro province. After a client visit, we had the chance to sit down with Carlos Peralta (not his real name), a local shrimp farmer who volunteered to share his story.&nbsp;</p>



<p>His journey is a journey that mirrors the struggles and triumphs of the Ecuadorian shrimp farming industry. Sitting under the shade of a palm tree near his ponds, Peralta shared his story—a story of resilience in the face of disease, economic hardship, and environmental challenges.</p>



<p>“The early years were tough,” Peralta recalled, his gaze drifting over the calm waters of his shrimp ponds. “But seeing my farm today, it feels like a dream—one that I fought hard to make come true.”</p>



<p>Peralta’s farm is now a model of sustainable shrimp farming, proof that even small operations can succeed with the right mindset and practices. His journey is a testament to the power of adaptation and perseverance in the world of aquaculture.</p>



<h2 class="wp-block-heading">The Challenges: Battling Disease and Uncertain Waters</h2>



<p>Like many small Ecuadorian shrimp farmers in the area, Peralta’s journey has been shaped by waves of hardship. The early 2000s brought with it a series of challenges that nearly broke his operation.&nbsp;</p>



<p>The biggest among these was the devastating outbreak of white spot disease—a viral infection that spread swiftly through shrimp ponds, devastating shrimp and leaving them empty.</p>



<p>“When it hit, it was like watching the hand of Jesus wipe out everything overnight,” Peralta said. “Entire ponds were lost within days, and we weren’t sure how we would recover.”</p>



<p>But disease wasn’t the only issue. Decades of unsustainable practices, such as the clearing of mangroves to make way for ponds, had begun to take their toll on the environment. The mangroves, once a natural buffer against coastal erosion and a key to maintaining water quality, were disappearing.</p>



<p>Without the protection of mangroves, Peralta’s farm was more vulnerable to the elements, and the water in his ponds became increasingly polluted. The situation was dire, but the environmental problems were compounded by financial pressures.</p>



<p>The economics of small-scale shrimp farming were equally unforgiving. Fluctuating global shrimp prices meant that even in good seasons, turning a profit was difficult. For a farmer like Peralta, every lost crop was a blow not only to his business but also to his family’s livelihood.</p>



<p>“We were always at the mercy of the markets,” Peralta explained. “There were times when we couldn’t afford proper feed or equipment, and we had to make do with what we had.”</p>

<p>Are farmed-raised shrimp bad? Let&#8217;s explore some of these myths and uncover the realities behind them.</p>



<h2 class="wp-block-heading">Myth 1: Farm-raised shrimp are less healthy than wild-caught shrimp.</h2>



<p>It’s really easy to imagine that shrimp plucked from the open ocean must be healthier than those raised on farms. The idea of something “natural” often feels more appealing.</p>



<p>However, this belief is far from the truth. Farm-raised shrimp, cultivated in controlled environments, frequently offer nutritional profiles that are just as good as wild-caught shrimp. A study, “<a href="https://www.researchgate.net/publication/287283789_Shrimps_-_a_nutritional_perspective">Shrimps: A Nutritional Perspective</a>,” highlights that farmed and wild shrimp have the same levels of protein, essential amino acids, and omega-3 fatty acids.</p>

<p>In the global seafood industry, the worldwide market gets shaken whenever a regulatory body makes a decision. One such decision was the USA&#8217;s ban on wild-caught shrimp from India.</p>



<h3 class="wp-block-heading">Shifting Focus to Farm-Raised Shrimp</h3>



<p>The U.S. government imposed the ban on wild-caught shrimp from India primarily due to environmental concerns, particularly the protection of endangered sea turtles. These majestic creatures were often victims of trawling nets, leading to a pressing need for regulatory intervention.</p>



<p>To address this issue, the U.S. required the use of<a href="https://www.fisheries.noaa.gov/southeast/bycatch/turtle-excluder-devices"> Turtle Excluder Devices (TEDs)</a>, which are designed to allow sea turtles to escape from shrimp nets while retaining the shrimp. However, Indian shrimpers could not consistently implement TEDs, and the ban was implemented.</p>



<p>In response, Indian shrimp producers shifted their focus toward farm-raised shrimp. In essence, the ban fast-tracked the growth of India’s aquaculture industry, turning farm-raised shrimp into the country&#8217;s primary export product in the shrimp category.</p>

<p>The seafood industry is quite competitive. The ability to distinguish and select the right grade of shrimp is not just a matter of culinary preference; it’s a strategic business decision. The demand for quality shrimp continues to rise, so shrimp businessmen need to understand the nuances of shrimp grading to keep an edge in the market.</p>



<p>From head-on to headless, shell-on to peeled, each type and grade of shrimp carries specific attributes that impact not only the end product but also pricing and customer satisfaction. (And ultimately, profitability.)</p>

<h2 class="wp-block-heading">The Basics of Shrimp Grading</h2>



<p>Grading is so crucial in the seafood industry. In shrimp, grades are categorized according to size, appearance, and quality. <a href="https://www.fisheries.noaa.gov/s3/2024-06/Part-5-Grading-Standards-6.4.2024.pdf">Grading systems </a>are important because they help buyers and sellers communicate better about the product, ensuring that everyone in the supply chain has a clear understanding of what is being traded.</p>



<h2 class="wp-block-heading">Size Grading</h2>



<p>Size is the most used grading system. Sizes are typically expressed in numbers, like 16/20 or 21/25. These indicate the shrimp count per pound, so a 16/20 grade means 16 shrimp weigh 20 pounds in total. This ultimately means that the smaller the number, the bigger the shrimp. Bigger shrimp typically mean a higher price point.</p>



<p>To keep the grading system friendly to its consumers, it is further translated into more layman terms, namely jumbo, large, medium, and small shrimp.</p>



<p><strong>Jumbo shrimp</strong> are typically graded as 10/15 or 16/20. These big boys are the largest shrimp available and are often prized for their impressive size and meaty texture. Jumbo shrimp are ideal for dishes where the shrimp are the star, such as shrimp cocktails or kabobs. Delish!</p>



<p><strong>Large shrimp</strong> fall into the 21/25 or 26/30 range. Large shrimp are versatile and commonly used in various dishes, from pasta to stir-fries. Restaurants typically order this size because of the balance between size and price point.</p>



<p><strong>Medium shrimp</strong> are graded as 31/35 or 36/40. These are smaller but substantial enough to hold their own in dishes like salads, curries, and shrimp tacos. They are more economical and are the typical choice for household dishes where the shrimp is part of a multi-ingredient dish.</p>



<p><strong>Small shrimp</strong> typically have counts around 51/60 or higher. These are often used in soups, stews, and dishes where the shrimp’s role is more about adding flavor than being the star. Small shrimp are the most affordable and are frequently used in bulk for large-scale food preparation.</p>



<p>Understanding these size categories and their corresponding counts is essential for making informed purchasing decisions that align with market demands and consumer preferences.</p>

<h2 class="wp-block-heading">Head-On vs. Headless Shrimp (HOSO vs. HLSO)</h2>



<p>Head-on shrimp (aka HOSO) and headless shrimp (aka HLSO), on the other hand, influence appearance and flavor.&nbsp;</p>



<p><strong>Head-on shrimp</strong> are celebrated for their rich, intense flavor. The flavor comes from the head itself, where the natural “head juice” enhances the flavors of shrimp meat. HOSO shrimp is particularly popular in Asian and Mediterranean dishes, where both the visual impact and the robust taste are equally important.</p>



<p><strong>Headless shrimp</strong> are favored for their convenience and versatility.
